Rosemary Cashew Flour Biscuits

INGREDIENTS:

  • 1 ½ cups cashew flour
  • 1 cup Parmesan cheese, grated
  • 2 tbsp rosemary, chopped dried/fresh
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • ½ tsp Minced Garlic
  • ½ tsp onion powder
  • ½ tsp baking powder
  • ½ tsp sea salt

INSTRUCTIONS:

  1. Preheat the oven to 180C/350F degrees.
  2. Mix together cashew flour, baking powder, garlic powder, and salt.
  3. Add the egg and butter and blend well.
  4. Mix in the cheese and rosemary until you have a blended dough.
  5. Roll small balls of the biscuit dough and place on a parchment paper-lined baking tray. Flatten the biscuits with the palm of your hand.
  6. Bake for 15-20 minutes until golden brown and firm.

Garlic Butter Bulgur Risotto

INGREDIENTS:

  • 2 cups bulgur
  • 4 tbsp vegan butter
  • 1 tsp Minced Garlic
  • 1 tsp onion powder
  • 1/2 white onion, minced
  • 4 cups vegetable broth
  • 1 cup green onions, minced
  • A pinch of chili powder
  • Sea salt and freshly cracked black pepper
  • A handful of pine nuts, toasted

INSTRUCTIONS:

  1. Heat butter in a large skillet over medium-high heat.
  2. Add onion and garlic and sauté for 1-2 minutes.
  3. Add the bulgur and toss with butter, garlic, and onion for a minute or two until coated.
  4. Add 2 cups of vegetable broth and stir gently with a wooden spoon.
  5. Adjust seasoning with salt and pepper; add green onions and toss to combine.
  6. Top with chili powder and toasted pine nuts.

French Green Lentil Stew

INGREDIENTS:

  • 2 small red onions, cut in half and sliced
  • 1 yellow onion, cut in half and sliced
  • 2 tbsp vegetable oil
  • 1 tsp Minced Garlic
  • 1 cup French green lentils, soaked
  • 1/2 cup red lentils, soaked
  • 4 cups vegetable broth
  • 1 tsp dried sage
  • 2 sprig fresh thyme
  • Coarse sea salt to taste
  • Black pepper to taste

INSTRUCTIONS:

  1. Add some vegetable oil to a large pot and bring to medium-low heat. Add in the sliced onions and cook down for about 15 minutes, covered. Stir occasionally until onions are soft and caramelized. Be careful not to burn your onions!
  2. Then, add in the minced garlic and sauté until fragrant, about 1 minute.
  3. Then add in all other ingredients and simmer for about 30-45 minutes, uncovered, until lentils are fully soft.
  4. Taste, and adjust seasonings if necessary.
